    For thousands of years, potatoes have been a vital part of life in the Andes. Indigenous communities domesticated the crop long before it spread worldwide. Now, recent studies show that this long-term reliance on potatoes may have influenced human evolution. People in Peru today carry more copies of a gene called AMY1, which helps digest starch. This suggests that natural selection worked to favor those with a higher number of this gene, especially after potatoes became a main food source in the region around 6,000 to 10,000 years ago. As a result, these genetic changes could have made digestion more efficient for Andean populations.

    How Potato Farming Changed Human Evolution

    Before settling in the highlands, ancestors of Indigenous Andeans already had different amounts of the AMY1 gene. Some individuals had fewer copies, while others had many. When potatoes became important in their diet, those with more copies of AMY1 gained an advantage. They could digest starch faster and better. Over many generations, this led to a higher average of AMY1 copies among current populations. Today, Peruvians have around 10 copies on average, more than most other groups surveyed. This change illustrates how diet can directly shape our genes over time.

    This research offers insight into how humans adapt to their environments and diets. It shows that, even in recent history, our bodies continue to evolve in response to what we eat.
